National Maple Syrup Day is celebrated annually on the first Saturday in December. The day celebrates the production of maple syrup, which is made from the sap of maple trees.

Maple syrup production begins in late winter or early spring, when the weather is cold enough to freeze the sap but warm enough to thaw it during the day. To collect the sap, farmers drill holes into the trunk of the tree and insert taps. The sap flows out of the tap and into a bucket or container.

Once the sap is collected, it is boiled down to concentrate the sugar. It takes about 40 gallons of sap to make one gallon of syrup. The syrup is then graded according to its color and flavor.

Grade A syrup is the lightest in color and has the most delicate flavor. Grade B syrup is darker and has a stronger flavor.
